With the mention of the word “absinthe”, one would conjure up images of the Green Fairy with her swirls of decadence and whirls of exhilaration. That is precisely what the team of Diego Chiarini and Stephane Colleoni (both of the famed OSO Ristorante) along with long-time friend Vincent Jauguiberry were aiming for. With the setting up of Restaurant Absinthe, they were gunning to demystify the French restaurant experience in Singapore by ensuring that it thrives in a lively and convivial atmosphere while serving up the most fabulous French cuisine, without pretense.
With the kitchen headed by Chef de Cuisine Pierre-Didier, the cuisine is deeply rooted in French heritage, particularly from the South West region. He pays particular attention to his ingredients, respecting their flavours by enhancing them rather than blending produce for a different taste.
And certainly, there is no better way to end the night than to imbibe one of the Absinthes to experience the Green Fairy in her fantastic glory.
